If you are the biggest fan of a good steak, well then this dish is exactly what you have been looking for. We tend to make it more for special occasions, even though it only takes a few minutes to make. Very important is that you need a very sharp knife!

Useful ingredient information:
Mirin
Is Japanese rice wine, which is quite common in the Japanese and Korean kitchen. You can buy it at every Asian store.
Oyster sauce
Has to be used very sparingly as it has a very intense taste but can change the whole taste of a dish. The most common is the Oyster sauce Maekrua.
Steak
Perfect for this dish is a medium to medium-rare steak (inner heat 60°C)
Ingredients: (2 Servings):
200g sushi rice
2 Rump steaks
3 onions
2 egg yellow or poached eggs
1 spring onion
2 cloves of garlic
40g butter
Sauce
4tsp white sugar
10tsp soya sauce
6 tsp mirin
4 tsp white wine
1 tsp oyster sauce
Let's start cooking:
Take the two steaks one hour before you start cooking out of the fridge
15 before cooking is the best time to set you rice cooker or cook your rice in a pot
Prepare sliced garlic and spring onions in a separate bowl
Start by peeling the onions and cutting them in half and then in fine slices

Throw them into the pan with all of the ingredients for the sauce
Stir for the first 4 minutes and then let it simmer on low heat for 5 minutes
In the meantime pat the steaks with a sheet of kitchen paper dry
Season both sides with salt and pepper
By now you onions should be done, drain the sauce from the onions into a bowl and set both aside
Heat up a pan with 4 tbsp of oil until it is searing hot
Fry both sides of the steak for each 30 seconds and then add in butter and garlic

For an additional 3 minutes side fry the steaks on each side
Wrap each steak in a foil and let it rest for 5 minutes
After that slice the steak into 5 mm thick slices
Lay your rice in a bowl, add the onions on top, and lay the steak slices in a circle like the picture above
Separate your egg yolk from the egg white and place it in the top middle and garnish with some spring onions
As a final touch pour the saved onion sauce over the steak
