Especially in winter, we need a lot of vitamins so that we don't get sick during these cold days. If your parents don't both are wearing glasses then you must have heard a lot as a kid that you have to eat a ton of carrots so that your eyes don't get as bad as theirs. Well, they were right. The carotin in the carrot has a lot of vitamins a which are good for your eyesight.

Ingredients:(2 Servings)
10 carrots
10-15g nut mix (sunflower seeds, pumpkin seeds...)
1/2 tsp salt
2 tsp sugar
pinch of black pepper
3 tbsp lemon juice
1 tbsp light balsamico vinegar
4 tbsp neutral oil
Let's start cooking:
Use a grater or a kitchen machine to grate the carrots with the smallest setting into thin shreds like the picture above
When you're done cover the salad and let it rest while preparing the dressing
Add the lemon juice, light balsamico and sugar into a bowl
Stir until the sugar is fully dissolved
Now add in the rest of the ingredients except for the nut mixture
Stir the dressing well and pour over the carrot salad
After mixing in for 2 minutes cover the salad bowl and let it fully unfold its flavor by letting it rest in the refrigerator for at least 20-30 minutes
For serving stir in some nuts, serve as a side dish or as the main party
