Pfitzauf (Popover)

A soft and fluffy egg batter, with a warm apple compote, is exactly what you need on your next movie evening. It only takes a few minutes and is very easy to make. I love to surprise my friends with a few of them and a good glass of wine or hot apple wine.

"Its best served with apple compote, plum compote or some vanilla sauce"


  • 3 eggs

  • powdered sugar

  • 80g butter

  • 150ml of milk

  • flour

  • pinch of salt

Let's start cooking:

  1. Take the three eggs and whisk them together with the powdered sugar.

  2. In a separate bowl add flour, salt, melted cool butter, and the milk

  3. Whisk together until it is smooth

  4. Now the egg batter can be added

  5. Place your cubs onto a tray, and preheat the forms for about 3 minutes

  6. After preheating them brush them out either with butter or a neutral oil so that the batter won't stick

  7. Now pour in the batter only till half as it will rise in the oven

  8. Bake for 20 - 25 minutes at 220 degrees

  9. Don't open the oven during the whole time or the souffle will sink and won't rise again after that

  10. When it's baked, serve directly as the will start to sink in
