Creamy garlic tomato pasta

This buttery and garlic pasta will let you mouth water. Pasta is always simple and a staple dish in our household. But sometimes you just want to make a simple dish even fancier. So take out your tastebuds and enjoy the taste of roasted garlic in a butter sauce topped with some white wine. We also add in a few shrimps on special occasions, so you are free to add in your favorite seafood if you'd like to.

Ingredients: (2-3 Servings)

  • 250g Spaghetti noodles (linguini are best for this dish)

  • 500g cocktail tomatoes

  • 60g butter

  • 10 basil leaves

  • 4-6 large gloves of garlic

  • 1 tbsp olive oil

  • 50ml white wine

  • 1 tsp sugar

  • pinch of salt and pepper

  • hand full arugula (optional)

  • (200-250g of shrimps optional)

Let's start cooking:

  • This whole dish starts with the garlic

  • Wrap it up it some foil or baking paper and pop it either unpeeled or peeled into the oven for 15 minutes at 200°C

  • In the meantime, if you using shrimps make sure they are peeled and that they are properly cleaned (Tip: If you are using frozen shrimps, defrost them by throwing them in lukewarm water and switching it every few minutes until they are soft)

  • Bring a pot of water to a boil and add in 2 tbsp of salt, the water should me really salty

  • When it starts to boil add in your noodles and cook by the package instructions

  • Prepare the cocktail tomatoes by washing them and cutting them in half place them by side we will need them later again

  • By now the garlic is done, it should be very soft and smell sweet and garlicky

  • With the side of your knife crush the garlic and mince it until it forms a paste

  • In a large pan melt your butter on low heat as we don't want to brown the butter

  • Now add in your garlic paste and tomato and let it simmer on low heat

  • The tomatoes should soften up and let out all of their juices, then sprinkle in the sugar

  • Don't forget your noodles they must be done so take them out, strain them and place them by side

  • If your using shrimps then now is the time to add it into the pan together with 3-4 tbsp of white wine

  • Season with some salt and pepper and slowly stir in your noodles

  • The sauce should really stick to the noodles and look creamy

  • Serve with some arugula on top or stir it in before that's to your preference

  • Don't forget to pour on a little of olive oil and serve with some parmesan
