Avocado pasta

Creamy, smooth, and very healthy avocado pasta is my go to quick recipe. This only takes 10-15 minutes and is perfect if you don't have a lot of ingredients at home but still want to make something filling and healthy. And if you use some plant-based spaghetti, then this dish is also a vegan dish for you.

Sweet lemon

Having an almost overripe lemon is perfect for this dish, as they will have this fine sweetness to it. In case you don't have a lemon like that add in a pinch of sugar and it will balance everything out


Ripe avocados

They a smooth a have a creamy texture and can be processed without a lot of effort. Especially young avocados will have an almost grassy taste in this dish. That's why you want to have ripe and soft avocados.


Ingredients: (4 Servings)

  • 500g spaghetti

  • 2 very ripe avocados

  • 1 small clove of garlic

  • 1/2 lemon or lemon juice (sweet)

  • 4 tbsp olive oil

  • pinch of pepper

  • 1 tsp of salt

Let's start cooking:

  1. In a large pot bring 500ml of salted water to a boil

  2. Stir in your spaghetti until it has fully emerged into the water

  3. While your pasta is cooking, cut your avocado in half, take out the pit, slice it into small cubes and scoop everything out with a spoon

  4. With a fork or a blender mush everything up so that you get a nice creamy texture

  5. Stir in your grated garlic, 3 tbsp lemon juice and 4 tbsp of olive oil

  6. Now you should have this nice light green sauce

  7. Taste everything off with 1 tsp of salt and a pinch of freshly grounded pepper

  8. In case your lemon was still young and very sour add a pinch of white sugar it will balance the taste out again

  9. Before straining your noodles add 3 tbsp of noodle water into your avocado sauce and give it another stir

  10. By now your noodles should be al dente, strain them and while they are still burning hotel toss them into the sauce and mix well

  11. This can also be served with some parmesan by choice
